Quick And Easy Raspberry Cake

 If you love quick and easy bakes with a fruity flavor then I guarantee that this raspberry cake will become your new favorite. It’s soft and fluffy which makes it perfect for any occasion and season-especially when you have frozen fruits!


Ingredients (for a small round pan):

1 glass of semolina

1 glass of all-purpose flour 

1 glass of kefir

200 grams of sugar 

120 ml of oil 

1 glass of frozen raspberries or other berries

10 grams of vanilla sugar 

1/2 teaspoon of baking soda 

2 eggs

Powdered sugar (optional for extra sweetness it can be used in dusting)

Instructions:

1 Preheat the oven to 180°C. Grease and line a 24 cm round pan with parchment paper.

2 Mix the wet ingredients- in a large bowl beat the eggs with vanilla sugar until smooth and fluffy, add kefir and oil 

3 Add dry ingredients- add semolina, flour, and baking soda, mix gently until you have a thick but smooth batter.

4 Pour the batter into prepared pan and add raspberries on top 

5 Bake for 30 minutes 

This light cake is so simple yet so delicious and the best part of it is that you can use any kind of fruits-frozen or fresh-depending on your personal preference.
