How to make perfect Popovers
If you are looking to impress at brunch or simply want to treat yourself to something delightfully light and crispy, popovers are the way to go. Popovers are the American cousin to Yorkshire pudding, made from a thin egg batter that pops up in the oven to create their signature hollow centers. The key to their dramatic rise is steam, which is why the batter is thin and rich with eggs. They pair beautifully with butter and jam for breakfast or they can be served alongside savory dishes like roast beef or soup.
Few Tips for Perfect Popovers

Room temperature ingredients: eggs and milk create a smoother batter which helps them puff up evenly.
No Peeking!- opening the oven door too soon will release the steam that makes popovers rise.
Ingredients:
1 cup whole milk (room temperature)
2 large eggs (room temperature)
1 cup all-purpose flour
1/2 tsp salt
1 tbsp melted butter
Butter or oil for greasing the muffin tin
Instructions:
1. Preheat the Oven & Pan
Preheat your oven to 230°C. Place a muffin tin on the middle rack while the oven heats.
2. Prepare the Batter
In a bowl, whisk together the eggs and milk. Gradually add the flour and salt, whisking until just combined. Stir in the melted butter. The batter will be thin-that is exactly how it should be!
3. Grease the Pan
Carefully remove the hot pan from the oven and grease the cups generously with butter or oil(I recommend butter for this unique, similar to puff pastry taste)
4. Fill the Cups
Pour the batter into the cups, filling each about 2/3 full.
5. Bake
Bake at 230 °C for 15 minutes, then reduce the heat to 180°C and bake for another 15-20 minutes until golden and puffed.
6. They are ready!
Popovers are best enjoyed straight out of the oven. I sprinkled some of mine with sugar. It is one of many ways in which they can be served.
