Recipe for the Perfect Strawberry Cake

 

Today, I decided to bake a cake that brings back the flavors of my childhood-just like the one my Grandma used to make. It is a fluffy strawberry cake:light, moist and full of the aroma of fresh fruit. A cake that melts in your mouth, with strawberries adding that perfect sweet and tart balance.

I love the moment when I take it out of the oven and the scent fills the whole house- it is like stepping back in time. It reminds me of summer days, open windows and family gatherings around the kitchen table.

A slice of this cake, paired with a cup of tea, is the perfect way to slow down and enjoy a moment of calm. Simple, nostalgic and made with love-this strawberry cake is more than dessert. It is a little piece of home.

Ingredients (for a 26 cm cake tin):

210 g wheat flour

100 ml of milk

3 eggs

80 ml sunflower oil

10 g baking powder

100g of sugar

Ingredients for the crumble:

75 g wheat flour

30 g semolina flour

60g sugar

75 g butter

30g chopped almonds

1 packet of vanilla sugar


Recipe:

1. First start by kneading all the ingredients for the crumble in a medium bowl, remember to take out the butter in advance so that the crumble comes out quickly and perfectly

2. When you have the crumble ready, start by slicing the strawberries - cut half the strawberries into small pieces and the rest of them into two parts

3. Place the strawberries aside and whisk the eggs well with the sugar and vanilla sugar (the mixture must be white).

4. Pour the milk and oil into the eggs and start mixing again, then gradually add the flour with the baking powder.

5. When you have the cake mixture ready, add the sliced strawberries to it, but only the small parts. Mix gently.

6. Transfer the dough to a buttered tin. Top with halved strawberries and sprinkle with crumble topping.

7. Place the cake in an oven preheated to 180 degrees Celsius and bake for 40 to 45 minutes.
