Cinnamn Rolls in Spring? Yes,please!

 There's something really special about the smell of cinnamon buns wafting through the house on a sunny spring morning. As the world outside begins to bloom, what's a better way to celebrate the season than with a dose of homemade cinnamon rolls - warm, fluffy and seasoned with just the right amount of spice?

Whether you're planning a weekend brunch, a cozy post-work treat in the garden or just looking for a little sweetness to welcome the new season, these cinnamon buns are the perfect addition to your spring baking list


Why Cinnamon Rolls in Spring?

While cinnamon might seem more at home in fall, pairing it with fresh citrus glaze or floral hints like orange blossom or lavender brings it right into springtime. There’s something deeply comforting about dough rising slowly on a breezy morning, a kitchen warmed by the oven, and a swirl of sugar and spice to brighten the day.

Ingredients You’ll Need:

For the dough:

  • 560 g of all-purpose flour
  • 1 packet (7g) active dry yeast
  • 240 ml warm milk
  • 60g sugar
  • 2 small eggs/1 large egg
  • 115 g unsalted butter, softened
  • 1/2 tsp salt

For the filling:

  • 110 g brown sugar
  • 2 tbsp ground cinnamon
  • Zest of 1 orange (optional)
  • 85 g softened butter

For the glaze:

  • 150g powdered sugar
  • 2–3 tbsp lemon juice
  • 1 tsp vanilla extract
  •  2 tbsp of hot water

Instructions:

  1. Make the dough: In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let it sit until foamy (about 5–10 minutes). Add the remaining sugar, eggs, butter, salt, and flour. Mix until a soft dough forms, then knead for about 6–8 minutes until smooth and elastic.
  2. First rise: Place the dough in a greased bowl, cover with a damp towel, and let rise in a warm spot for 1–1.5 hours or until doubled in size.
  3. Shape the rolls: Roll out the dough into a rectangle. Spread butter over the surface, sprinkle with the cinnamon-sugar mixture and orange zest. Roll tightly and slice into 12 even rolls.
  4. Second rise: Place rolls in a greased baking dish, cover, and let rise for another 30–45 minutes.
  5. Bake: Bake at 350°F (175°C) for 20–25 minutes until golden brown.
  6. Glaze: While the rolls are still warm, drizzle with the glaze. For a fresh spring spin, add orange juice or rosewater for a delicate floral note.
